Just wanted to point out that in small amounts, vegetables can be actually quite tasty! Understand that I am looking at this from the standpoint of a childhood where vegetables were the French Fries at McDonalds. The ketchup allowed me to get a second veggie, sort of. And of course, the pickle was once a cucumber.

As a kid, I could eat green beans, corn, carrots, mashed potatoes, and that was about it.

Once I got to college, salads with cucumber got added, and celery in my tuna pitas gave a crunch.

However, if choosing between a plate of lasagne or a plate of broccoli, the lasagne would get picked, first, and seconds would be any lasagne that was left over.

Trying this Five Bites(tm) non-diet though, I have found that the bitter taste of califlower, asparagus, broccoli, or Brussels Sprouts is actually something that I can look forward to. Raw squash is actually quite yummy, too. Since I pause between bites, the flavor of the Broccoli mellows out from bitter to just tangy, and becomes quite tolerable.

1. Any other veggie hating folks out there that have "converted"?
2. Any other veggies that might be tasty straight out of the box that I have not mentioned?
3. Any list for benefits per calories out there for veggies?
4. Any veggies that I should avoid?

So, I was told that I was 100 pounds overweight. My two kids combined didn't weigh 100 pounds. So, I dropped EVERYTHING from my mouth except for the basics, and ate slower, and 40 of the 100 is gone! And I did it without paying for some "program", just the classic cutting calories method. Sometimes, the simplest way is the best way.

1. i never converted. vegetables=yuk!
2. veggies and tasty should never be used in the same sentence
3. benefits per calories i do not understand what you mean by this could you rephrase
4. any ones that are green or moldy

When I was a child vegetables were overcooked mush.
Since I have gotten older and learned better cooking techniques (my mom was a horrible cook except for baked goods) I have found many vegetables that I have grown to love and enjoy.
I need to eat more of them.

Did you ever tell your mom what you thought of her cooking?

I do like veggies but have found that if you can afford it the quality is so much better at the nicer whole foods/organic market type stores. I prefer grilled vegetables, and when I get lazy I buy them pre-grilled/pre-cooked and read to go! I try to get some spinach added to my salad, and have broccoli, cauilflower, dark green lettuce, carrots, string beans, edamame, mushrooms, squash, celery, and i am forgetting what else.

Actually, since March I have begun ordering the "replacement veggie dish" whenever I go out to eat. They usually bring out too much of it, since this is just a side to the main meal. But the way they cook them nowadays--usually stir-fried or at least steamed in broth--they taste so much better than the mush that used to be served. (And my mom was guilty of this, too--they just didn't seem to know any better in the '60s.)

As for new ideas...you might want to try sliced zucchini and onions, simmered in olive oil, at home. Quite tasty. And I understand sweet potatoes are a real treat--and provide lots of good nutrients. I used to hate asparagus when I was growing up, but now it's for very special occasions. My husband LOVES beets....I must confess, I still can't stand them. Oh, and tomatoes--I know they're actually a fruit--but we grow them, and I can't get enough of them.

PLUS, one of my main calorie fighting tricks...I always make a salad to go with our take-out pizza. I slowly eat one slice of deep dish pizza while eating salad on the side, and I'm full after one piece. I'm so proud of this HUGE change in my behavior. Now I find that if I have pizza anytime, I have to have salad with it--they seem to go together so well.

Just curious...

1. I never ate veggies as a kid but now have expanded a bit to carrots, lettuce, celery, roasted red peppers, small amounts of spinach....but that's really about all I like.

2. Like Merle the nicer farmers market/upscale grocery stores sell incredible fire roasted and/or grilled veggies ready to eat out of the box. So good.

3. See the fil I am attaching with nutritional values for a lot of fruits and vegetables. You need adobe acrobat to read but it's a great chart!

4. Anything with mold on it?

mm i love vegetables. but there are some that arent so good when on a diet i hear...such as corn?? i think anyway...does anyone know the good and bad veggies??

Hello spinachdip,yes I have also heard that you shouldn't eat so much corn and so many carots-at least not in the evening. These vagetables activate the production of insulin which isn't good at all at night, because then the fat buring process doesn't work that good. (it's the same with fruit) But any other vagetables are fine in the evening.

I also got this information just a few weeks ago. I used to have salad for dinner, because you shouldn't eat so rich food in the evening. I also topped my salad with lots of corn and carots and I was wondering why I still don't lose any weight. So that was probably the reason for my disappointment!
