POLYNESIAN DUNGENESS CRAB STACK

Mango, pea shoots, cucumber, tomato, avocado & peanuts served with spicy ginger lime dressing.


Nutrition Information per Serving:

280 Calories, 10 g Fat, 45 mg Cholesterol, 780 mg Sodium,
18 g Protein, 33 g Carbohydrate

This nutrition analysis corresponds to the recipe below.
The restaurant version may differ.



Ingredients (4 servings):
Crab Stack:
1 cup pea shoots, cut in 2" pieces
1 cup mango, diced in ½" pieces
1 cup cucumber, seeded & sliced
1 cup red onion, thinly sliced
1 cup roma tomatoes, seeded & sliced
½ avocado, diced in ½" pieces
8 oz. Dungeness crab meat, squeeze dry
¼ cup peanuts, ground & toasted
1½ Tbs. cilantro leaves


Ginger Lime Dressing:
½ tsp. garlic, minced
1 Tbs. chile paste
2 Tbs. ginger root, minced
3 Tbs. fish sauce
3 Tbs. lime juice
¼ cup + 1 Tbs. water
¼ cup + 1 Tbs. sugar

Directions:
Combine ingredients of ginger lime dressing in a medium-sized bowl and set aside.
Place the four tubular molds on the serving plates. Beginning with pea shoots and ending with crabmeat, place each ingredient in turn into the four tubular molds. Pack firmly. If you're not using molds, stack ingredients on the plates.
Garnish with peanuts and cilantro leaves, and drizzle with dressing.
Take off the mold by pressing down on the stack and lifting the tube at the same time.
For the most effective presentation, the restaurant suggests using a tubular mold that is open at both ends (1 per person) for preparation.
