Pita pizzas!

I developed this recipe recently; the BF, who loves to eat, loved these.

Servings: 2

2 Western Bagel Alternative Pitas, plain (you can usually get these at Sprouts, I'm told you can also find them at HEB Central Market, Whole Foods, and Trader Joe's.)
1/4 cup Delallo fat-free marinara sauce (the type that has 30 cals per ½ cup)
100 g chopped roma tomatoes (2 small-medium cored romato tomatoes)
50 g chopped gold bell pepper (works out to about half a cored small-med pepper)
5 tablespoons finely diced red onion (2 thick slices off the narrow end with the centers popped out)
1 cup washed and torn baby spinach
2 cloves garlic
4 oz 93% lean ground turkey
1 oz shredded gruyere
1 oz crumbled feta (not the kind in OIL)
3 tablespoons shredded parmesan (real parmesan, not the Kraft stuff in a can)
Ground black pepper
Crushed red pepper
Dried thyme
Dried sage

Saute the ground turkey with sage, thyme, and pepper (or dried herbs of your choice) until browned. Drain the fat off, then add the garlic, tomato, pepper, and onion. Saute over medium heat until the tomatoes start to soften. Add the spinach and stir over low heat until the spinach wilts.

Microwave the pitas for 30 seconds, then spoon the marinara sauce over them. Top with the turkey/vegetable mixture, then divide the cheese between the two.

Bake at 425F for 7-8 minutes or until pita bases get crunchy and cheese is nice and bubbly. Cut into halves or quarters and enjoy!

Fat: 14.4
Sodium: 891*
Carbs: 35.3
Protein: 29
Sugars: 5
Fiber: 10

*Almost half of the sodium is coming from the pita itself. Most of the rest is coming from the feta and parmesan cheeses, so you can cut the sodium (but not the calories) by using part-skim mozzarella instead of parmesan and feta.

Also if you use a different brand of pita for the base you'll have to recalculate the nutritionals pretty drastically; the Western Bagel Alternative Pita has 110 calories and 8g of fiber (and 410 mg of sodium, boo) which is much fewer calories and much more fiber than most brands out there (which is exactly why I use them all the time at home)!

Thanks! I think I am going to make some pita pizzas for the superbowl. Do you think this would work okay w/out the gruyere cheese? I can't remember what it tastes like, so I'm not sure if its an important flavor component or not.

So far, I was thinking of doing a bbq chicken pizza and maybe some type of goat cheese pizza. I will try this one out too

Gruyere is one of the main cheeses in a Neuchatel fondue (the other being Emmentaler). It has a sweetish, nutty-ish flavor. I used it in the recipe because I like it, but there's no reason why you couldn't substitute another cheese for it if you want to.
