| No Sugar No Fat Brownies I've fallen in love with a book full of magic formulas, the best diet cookbook I've ever owned (& I've a shocking amount.) It's the first that teaches both incredible new things about health, but also teaches how to cook for yourself with No Sugar & No (bad) fat! THIS IS A FIRST, for me anyway. Every other diet book, program, or product has always proclaimed No Sugar (but they sneak in fat), or No Fat (but they sneak in all kinds of hidden sugar). The name of this book is "The Cardiologist's Wife's CHOCOLATE TOO! Diet: No Sugar, No Fat & Luscious" (on Amazon) and it's the best thing I've ever found for my family & me. I'm so excited. With all my heart I'm rooting for everyone else with weight & diabetes problems, so I'll copy this great Brownie recipe here. NOTE: They're really a high protein, high-antioxidant health boost, but they're still delicious!

New Age Brownies: More delicate than Anytime Brownies, and a very different kind of recipe. Still no bad fat, egg yolks -- or sugar in the form of mashed bananas, dates, honey, molasses & its other disguises. (You get plenty of sugar from the healthy grains, fruits, & veggies you eat. Metabolism's bottom line: EVERYTHING breaks down to one of three things: protein, fat, or sugar.)
1/2 cup Quick cook oatmeal
3/4 cup Oat flour
1 tablespoon baking powder
1 tsp salt
3/4 cup Unsweetened Cocoa
1 cup Splenda

1 tbsp Ener-G egg replacer & 6 tbsp warm water
1 tsp vanilla extract
1 cup liquid egg whites
*3/4 cup shredded fat free mozzarella cheese.
5 tbsp canola oil
Preheat oven to 350. Spray baking dish with cooking spray.
Mix 6 dry ingredients in medium bowl; set aside.
Separately fork-froth the Ener-G & water, then add vanilla.
Combine egg whites, cheese, & canola in skillet over low-medium heat, stirring as the cheese melts, adding the Ener-G mixture & vanilla. If eggs start to cook, remove from heat for a bit, stir more.
Now add dry ingredients to mixture in pan, stir, pour into baking dish.
Bake for 15 minutes. Let cool 10-15 minutes before cutting.
Makes 16 snack-sized brownies, 97 calories each, or 12 huge brownies, 130 calories each. In each 12-size brownie: 5 g protein, 2 g dietary carbs.

I'm making these this afternoon too! They're delicious! Chocolate is chocolate ...but be sure to use unsweetened, non-alkalinized cocoa. We usually use Hershey's, the little brown box, but supermarkets are starting to carry their own brands with the good health news about cocoa. (Alkanization, or Dutch processing, destroys the antioxidants. Unsweetened, non-alkalinized cocoa has HUGE amounts, so tell your friends THESE ARE GOOD FOR THEM. A high-protein, high antioxidant snack.
They're soooo good. Lemme know how they turn out...well, practice makes perfect, but I think they're easy.
From now on, I'm ONLY going to eat No fat, No Sugar. We get so many sugar & carbs from the fruits & veggies we eat. I'm making ALL our meals from that book I mentioned.
My oven's preheating right now. Gotta go. Yum! Slurp! Have fun!

My family loved the first batch too, but oh my sweet tooth, so I made a second batch with a bit more splenda in it. 1 1/4 cup instead of 1 cup. I love to experiment anyway. Also, the second batch I baked for a bit less time. 13-14 minutes instead of 15, & they came out more moist.
What just knocked everybody out is that these are all protein and antioxidants. So good for your health! Somewhere in the book it says that one tablespoon of unsweetened non-alkalinized cocoa has 4,000 antioxidants. I'm ecstatic about that. I use the Hershey's btw, the little brown box. I've noticed that a lot of supermarkets are starting to carry their own brands of non-alkanized cocoa, now that the word is out about its health properties, and that's fine. Just make sure the box doesn't say "Dutch processed" or "alkalinized," because that destroys the antioxidants. The book is also fascinating to read, because it explains so much about health and antioxidants that I'd never understood.
I'll copy more recipes from it. Hey, it's an art form you can eat!

I'm still so amazed by that idea of substituting the fat free cheese for unhealthy sugar & egg yolks. It's like a magic formula. You don't taste the cheese at all! There's also a healthy muffin recipe in the book, without the cheese but I'm going to put some in that too. Works like healthy glue! Strange that I have never heard of the book before as usually I really enjoy cooking and I have lots of books with great recipes (but most of them aren't adapted for a diet). Just out, but people are talking about it. I told a friend last night and she said she'd already heard about it.
Happy baking and dieting! Imagine...a HAPPY diet? I've been on it since Oct 15 and I've already lost 5 pounds, although the first 5 pounds are always the easiest. Still, I haven't had any cravings, and this diet's not boring! I'm happy with it, it could easily become a health program for life.
P.S. If you get the book, look for the recipe for No sugar, no fat, no cholesterol Pumpkin Pie. It's delicious! Better than the usual lardy kind.

A happy diet....that would be so great, but I guess it is just a dream... Unfortunately I haven't bought the book yet, but probalby you can't bake these sweet stuff all the time, can you? There are long, wonderful sections of medical information.
The occasional no sugar no fat sweets are the bonus. What the book calls "the diet's engine." I was also amazed to discover that 1 tablespoon of unsweetened non-alkalinized cocoa contains 4,000 antioxidants. Double that of dark chocolate, without the fat and sugar.
That's why I love this book. The authors are often funny, btw.

Probalby you are right. I also have these cravings from time to time and maybe it is really a great idea then to eat these kind of sweets. By the way I have ordered the book yesterday in the internet. So hopefully I will get it soon and so I could prepare a few more of these great cakes and muffins! |

Although the word "diet" sounds UGH, each day has no-sugar no (bad) fat chocolate fudge, cocoa, muffins or something great like that but don't go overboard with them. Each day's total is usually around 1200-1300 calories, although I'm now up to 1400 calories a day, sometimes 1500. I'm feeling good, reassured, so it's okay now if it comes off a bit more slowly. You work it as you choose.
Something else? The first 64 pages are important medical information, and were fascinating for me. Be sure to read them. They're real eye-openers, full of the latest updates in nutrition and health, and the authors are often funny.
Imagine, a diet book that's funny! The authors take turns and often kid each other. For me, reading it is like curling up reading a letter from two friends who care about me.
Another great thing is, each meal or snack's calories are measured, so you can switch meals & snacks around as you choose. THE CHOCOLATE & yummies WILL PREVENT BOREDOM AND CRAVING, that's the best part!
Don't forget to make that pumpkin pie. I've already baked it for several friends....and they can't believe it has NO Sugar or fat in it! It is soooo delicious. Whee, I'm giddy about this diet. For me it's the best ever.

Also, a question. We both have the book but others don't. I meant to copy more recipes from it onto this site, and am so sorry I haven't yet...I broke my wrist, it's now in a long splint, but I can type better now.
Should I copy more recipes from it and put them here? Or where? I forgot. I'm so thrilled with this diet, I want to help everybody. Let's start a crusade. We gotta get our country thin & healthy again.
Some of my favorite "carry to work" lunches are the Anytime Blondies and the Cheese 'n Onions bar. Have you tried them? Sometimes I take the regular meals in a plastic container too. The Tex Mex is my favorite there. So easy to make.
So where should I post more recipes? For those who don't have the book?
I'm so happy you do. I swear, it's the chocolate that's making me happy! Well, that and losing weight, finally, at last.
