Mixed Berry Cobler
These don't hold a candle to my mothers apple cobler, but I'm pretty sure they're waaaaay better for you calorie-wise.
2 tbsp whole grain pastry flour
1 tbsp brown sugar
1 tbsp cold, unsalted butter
1 pkg (12 oz.) frozen mixed berries
2 tbsp sugar
1 tbsp cornstarch
1 tsp lemon juice
Preheat oven to 375 F. Place six ramekins or custard cups on a baking sheet. Whisk the flour and brown sugar. Cut the butter into small pieces, add to the bowl, and mix until crumbley. In another bowl mix berries, sugar, cornstarch, and lemon juice. Spoon 1/2 cup of berry mixture into each ramekin. Sprinkle each with 1/2 tbsp of topping. Bake about 30 minutes.
Makes 6 bowlfuls (servings). Approx 83 calories per serving.
I added a bit of low-fat cool whip for a finishing touch. They were still yummy even when I reheated them for a minute in the microwave (since they lasted my fiance and I for three nights). Enjoy!
