Grilled Mahi Mahi

Let's get started with this awesome healthy grilled mahi mahi recipe, shall we?

Ingredients!!!!

2 6oz fillets of fish...I prefer mahi mahi for this, but other fish will do!
1 jar of roasted red/yellow peppers, I find these in the same aisle as pickles
1/2 tsp cayenne pepper
1/2 tsp onion powder
1 clove garlic (not one half of an entire garlic bulb)!
2 tbsp extra virgin olive oil
1 tbsp red wine vinegar
1/2 tsp cumin
low sodium salt/pepper to season the grilled mahi mahi at the end!


First we're making sauce! Mix the Cayenne pepper, oil, garlic, vinegar, onion powder, cumin and roasted red peppers in your blender and puree!

Time to get that mahi mahi grilled! Add a little oil to your grilling pan and put it on about 75% heat (med-high). Use that low sodium salt and pepper to season the flesh side of the fish, and put the mahi skin side down in the pan. Grill the mahi mahi for 4-5 minutes until the skin is crispy, flip it so the flesh side is down, and cook for 2-3 more minutes.

This recipe makes 2 servings, so use half of everything mentioned above to make one serving.

Grilled mahi mahi nutritional values:

300 calories
14g fat (2g saturated fat)
8g carbs
34g protein
~300mg sodium depending on your usage
