Chicken strips with honey mustard sauce

Chicken strips with honey mustard sauce
Dietitian's tip: By using skinless, boneless chicken breast instead of chicken wings, you cut fat and saturated fat by half and save more than 100 calories.


SERVES 4
Ingredients
4 skinless, boneless chicken breasts, each 4 ounces and cut into 3 strips
1/4 cup fat-free milk
1/4 cup all-purpose (plain) flour
1/4 teaspoon salt
1/4 teaspoon cracked black pepper
2 tablespoons canola oil

For the dipping sauce
1/2 cup honey
1/4 cup Dijon mustard



Directions
In a large bowl, add the chicken strips. Pour milk over the chicken and mix to coat well. Place in a single layer on wax paper.

In a small bowl, mix together the flour, salt and pepper. Sprinkle over the chicken strips, turning the chicken to coat evenly. Shake to remove excess.

In a large, nonstick frying pan, heat the canola oil over medium-high heat. Place the chicken strips in an even layer in the pan. Saute, turning once on each side until golden brown, about 2 minutes. Remove and place on paper towels to drain.

To make the dipping sauce, combine the honey and Dijon mustard in a small bowl. Stir to mix evenly.

tried it last night...the sauce is a bit too sweet...so i added a lil bit more mustard and reduce the honey.

the chicken taste nice even without the sauce. *yum*

I was going to make this last night but my chicken didn't defrost all the way, so I'm trying it tonight. I've made chicken strips in the oven but wouldn't have thought you could fry them with so little oil. Sounds good! My husband wants his with hot sauce Buffalo-style. I am a honey-mustard fan but going to try it with barbecue sauce too.

Hey, had this for dinner tonight!

Yummy, but I had the same problem as whenever I've tried to make fried chicken, the coating comes off. The recipe says to wait 2 minutes before turning the chicken but I found it took more like 5 minutes at medium heat and if you turn it before it's browned you lose the coating. The 2 TBS oil turned out to be plenty.

My hubby was craving spicy food since he has a cold so he mixed hot sauce and a little butter and made a Buffalo chicken sandwich, don't know how many calories that was. But I cut my serving up and had it over a salad with 2 ounces each of lettuce mix and chopped cucumber, and one ounce each of red onion and cheddar cheese, and topped it all with 2 tablespoons of light honey-mustard dressing. A big delicious dinner salad and only 500 calories! The recipe's honey-mustard sauce is about 110 calories per 3 tablespoons but I used a dressing with 35 calories in 2 tablespoons. The cheddar added on an extra 114 calories but it was worth it!

So I recommend this recipe but the sauce is a bit high in calories and don't be impatient like me and turn the chicken too soon!
