Health issues associated with obesity are one of Australia’s leading health problems more than 2.4 million adults are classified as obese according to the Australian Institute of Health and Welfare.

A new product on show at the Australian Institute of Food Science and Technology Inc. (AIFST) 40th Anniversary Convention in Melbourne is providing a solution for developing better food choices which are lower in fat and calories, boost dietary fibre content and still deliver great taste.

Z Trim, developed by scientists at the US Department of Agriculture (USDA) is a natural, zero calorie, fat substitute made from the bran and hulls of cereal grains and legumes. Used in foods or taken in capsule form as a nutritional supplement, the natural fibre in Z Trim contributes to a feeling of fullness that helps control appetite safely with no side effects.

Many schools in the US have been testing the use of Z Trim in their cafeterias since the beginning of the year, actively using Z Trim in a variety of foods. With no taste and calories, Z Trim functions as a fat in food preparation enabling a safe and palatable reduction of high calorie oil, butter and margarine, even eggs. And importantly the kids prefer the taste of food prepared with Z Trim.

Dr Triveni Shukla, VP of technology development, believes that instead of telling people to make better food choices, we need to start making the foods they eat a better choice.

“The majority of the fat we consume comes from meat, then baked goods, dairy and then dressings - 80% of mayonnaise is fat – Z Trim can reduce the fat content of mayonnaise to only 14%,” he said.

“Z Trim offers Australian manufacturers a natural ingredient to lower calories from fats by up to 50% without affecting taste.”

Z Trim can also help maintain a diet low in saturated fat, trans fat and cholesterol and can fortify diets with an all natural, healthy fibre. As a food ingredient or a dietary supplement Z Trim can provide an all natural solution to weight management that does not require dieting, exercising or giving up delicious foods to achieve success.

Looks great, but since Z Trim was developed in the United States and already being tested why have I not heard of it yet?
