| Thanksgiving plans- Healthy recipes?
What is everyone doing for Thanksgiving? Is anyone going to try to incorporate some healthy recipes into their feast or are you going to just enjoy the yumminess of Tgiving?
Any good healthy foods/recipes you suggest? I saw a "no sugar added apple pie" at Village Inn that won some national pie award, but who knows!
P.S. There is canned pumpkin shortage this year due to floods! http://www.freep.com/article/2009111...e-for-holidays |

I am making this, it came from the Weight Watchers website(if I can find fresh green beans):
Green Beans with Mushrooms and Crisp Onion Crumbs
Servings 8
2T Unsalted butter, divided
3/4 c dried bread crumbs, panko (Japanese bread crumbs)
2T Dehydrated onion flakes, minced
3/4t table salt, divided
Cooking Spray
1 1/2 pounds uncooked fresh string beans, trimmed, cut in half
1 pound button mushrooms, thinly sliced - To make crumb topping, in a large, deep, nonstick skillet, over medium-low heat, melt 1 tablespoon of butter; add bread crumbs, onion flakes and 1/4 teaspoon of salt. Increase heat to medium and cook, stirring often, until lightly toasted, about 3 minutes. Remove from skillet and set aside; carefully wipe skillet clean.
- Coat skillet with cooking spray; place over high heat. Add string beans and mushrooms; sauté until lightly golden and tender, about 6 minutes.
- Add green beans, remaining tablespoon of butter and 1/2 teaspoon of salt to skillet; toss over low heat until butter is melted and mixture is heated through. Transfer to a serving platter; sprinkle with crumbs. Yields about 1 cup of vegetables and 2 tablespoons of crumbs per serving.

No Thanksgiving for me I'm crippled after surgery and am going to have to stay home. Maybe I'll make a whole grain flatbread with turkey breast topping.

No Thanksgiving for me either, I'm too lazy to cook a turkey. And can't afford the vacation days right now to go visit family long enough to make it worth going that way.
I might do the chinese food thing.

Matt, you can always buy a whole, boneless turkey breast and cook that. It is MUCH less of a fuss than buying a turkey. I think they can be anywhere from 2-6 pounds. There is almost no prep and they cook fast. You can even put one in a slow cooker.

Just the usual Tofurkey, roasted vegetables and home-made pumpkin pie! Of course I'm going to enjoy myself and indulge...

I thought I had my plans down but my 95 yr old grandmother through a wrench in our program. That's ok though. She's elderly and very crancky right now. Since she won't allow us to come get her, we are going to her. She lives in assisted living so the food is fairly good but I am sure loaded with preservatives. Will just have to practice portion control.

I'll be eating on the go anyway it looks like because I have plans to be out in the mountains a lot of the day.
Not technically too late, but I hate crowds so I try not to do any food shopping this close to the holiday.

Ohh Thanksgiving! We were going out, but plans changed. I'm cooking a little 12 lb turkey, wild rice, mashed potatoes, fresh broccoli and pumpkin pie!
I have to feed my man, and plan on enjoying the day myself with a little taste of everything!

My holiday lunch was out the window! But I did pretty well and did not indulge too much. I mean, it really was not my fault that my BIL left the vodka out.
After the holiday, we joined some friends out in the country to hang out, guy stuff. I was the only female. They will mostly drink and eat high calorie food. So I went to town and bought a bunch of Veggies and cut them up, made some dip. It was like pigs at feeding time...yeah, they were drunk. But it gave me some things to munch on . I will do that again when we go out there. They ate some healthy food and probably don't remember it.
