| Going Strongish!
After a few weeks of being off the wagon, I'm back on it big style, but I'm still falling at some hurdles.
I'm still walking to work, holding my stomach muscles in to make my body work harder. I've cut back on sugar in my coffee, I am now down to one sugar per cup (I used to start off with three, then two for a while). My husband is used to me doing chair exercises whilst in the back.
My problem at the moment is that I haven't slept well on Sunday night and as a result I'm vulnerable and want to just crawl into bed when I get home. I've wanted to pop into the local cafe on the way to work and grab a sausage and fried egg roll, but have resisted so far. Might treat myself on Friday as I haven't had one in ages. That will be my treat for the week.
Anyone got any ideas for fillings in jacket potatoes? I'm getting a bit tired of tuna or beans (won't even contemplate putting both together!).

Also try in the potato: - Tuna mixed with sweetcorn or onion and either natural low fat yogurt, a vinegar based dressings or a small amount of low fat mayonnaise
- Sardines or mackerel mashed with lemon juice
- Lean ham chopped and mixed with cooked mushrooms, parsley and a little light cheese
- Cottage cheese with pineapple, kiwi, diced tomato

Hi, J. I just eat them with fat free sour cream and low fat cheese. BUT pico de gallo is really good in them too. OD's suggestion with the ham...add some salsa.

Those are great suggestions. One question though Fluffymomma: What is pico de gallo? Haven't heard of it over here in the UK.

J. | Yeah, there's not a lot of Mexican food in the UK!  Pico de Gallo is spanish for Rooster's Beak.
It's made from fresh ingredients, primarily chopped tomato and onion. Sometimes I see chiles added. People then tend to add other ingredients like lime or lemon juice, some cilantro (another mexican seasoning), cucumbers, radishes, or even tropical stuff like mango or papaya.
A good solid recipe for Pico would be would be: - 1 1/2 cups diced tomatoes
- 1/4 cup diced red onion
- 1 tablespoon diced jalapenos
- 1 tablespoon minced garlic
- Juice of 2 limes
- 2 tablespoons cilantro, plus extra for garnish
- Salt and pepper
Fresh parsley is a good substitute if you can't find cilantro, and cilantro is very overpowering for some.
