| low-carb thai coconut chicken soup this is good when your in the mood for something semi-hot and different.. one can low-fat coconut milk(check on back of cans for lowest carb option).4 skinless chicken breast, which you want to cook in one can of chicken broth. 400 degrees for one hour. you'll need 4 cans total, once the chicken is done cooking shred it and put everything together in a pot on the stove on med. heat. then you'll add about 1/4 cup fish sauce,2-3 tab. spoons of chopped ginger, lemon grass1-2 tab. spoons, chopped jalepinos (i use about 1/8 cup. you also could use chopped green chiles if your heat sensitive). once in awhile i'll add chopped cilantro. hope you enjoy, this is one of my hubbys favorite recipe and hes not on a diet.
