Atkins - Spicy Turkey Club

SPICY TURKEY CLUB

1/2 cup mayonnaise
3 tablespoons sliced scallions (about 1/2 scallion)
1 tablespoon fresh lime juice (1/2 medium lime)
1 tablespoon Asian chili sauce, or any chili sauce that has
no added sugars
1/2 teaspoon chopped garlic
salt and freshly ground black pepper
1 pound deli roasted turkey breast
8 radicchio leaves
12 slices Atkins BakeryTM Ready-To-Eat Country White
Bread, toasted
1 small tomato, sliced (optional)
8 slices of bacon, cooked until crisp and broken into halves
(optional)
1. Combine mayonnaise, scallions, lime juice, chili sauce,
garlic, salt and pepper to taste in small bowl.
2. To assemble sandwich: Spread bread slices with
mayonnaise. Lay 2 to 3 turkey slices on top of 4 bread
slices and top with one radicchio leaf (if using tomato
and bacon, add once slice of bacon and one slice of
tomato as well). Repeat layering once and then cover
with the last 4 bread slices. Insert toothpicks to hold
sandwiches in place before slicing.
Our updated version of an old classic uses a spicy garlic-lime
mayonnaise, which tastes great with any of the various flavors of
sliced turkey breast now available in the supermarket: pepper
turkey, natural roasted or honey baked.
