Atkins - Spice-Roasted Cornish Game Hens

SPICE-ROASTED CORNISH GAME HENS

8 garlic cloves, minced
3 tablespoons extra virgin olive oil
2 tablespoons peeled, grated fresh ginger
2 teaspoons grated orange zest
2 teaspoons paprika
1 1/2 teaspoons ground cumin
1 teaspoon ground coriander
1 teaspoon fennel seeds, crushed
1/2 teaspoon ground cinnamon
1 1/2 teaspoons salt
1/2 teaspoon pepper
6 (1 1/2-pound) Cornish game hens
Mixed olives, orange slices and parsley sprigs for garnish
Kitchen string
1. Heat oven to 400F. Set a wire rack on a large, rimmed
baking sheet and lightly coat with oil.
2. Combine the garlic, oil, ginger, orange zest, paprika,
cumin, coriander, fennel seeds, cinnamon, salt and
pepper in a bowl; mix well to form a paste.
3. With your fingertips, loosen the skin over the breasts
and legs of the hens. Rub three-quarters of the spice
paste under the skin over the breasts and legs. Rub the
remaining paste on the skin of the hens. Tuck the wing
tips under the birds and tie the legs with kitchen string.
Place hens on rack.
4. Roast the hens for 45 minutes. Baste occasionally and
