Atkins - Prime Rib of Beef

PRIME RIB OF BEEF

Calories: 902

3-4 pound beef rib eye roast, small end, well trimmed
1 teaspoon salt
1/2 teaspoon pepper
1 bunch watercress, cleaned, stems removed or arugula
leaves
1. Heat oven to 350 F. Place roast, fat side up, on rack in
shallow roasting pan. Insert ovenproof meat
thermometer in thickest part. Roast 1 1/2 hours for
medium rare (135 F. on thermometer), 1 3/4 to 2 hours
for medium (150 F ). Remove from oven; let roast rest
for 15 minutes (to allow juices to redistribute.
Temperature of roast will rise an additional 10 F.) Add
1/2 cup water to roasting pan, and scrape up dried-on
bits with a wooden spoon; strain. Serve this beef jus
alongside the sliced beef. Garnish with watercress.
