| Atkins - Pizzettes (Mini Toaster-Oven Pizzas) PIZZETTES (MINI TOASTER-OVEN PIZZAS) Servings: 12
Prep time: 0:05:00
Bake/Cook time: 0:23:00 Calories: 91
Fat: 3 grams

12 very thin slices Atkins Bakery Country White Bread
3/4 cup controlled carb tomato sauce (such as Raos)
1 cup shredded provolone or mozzarella cheese
2 tablespoons chopped fresh parsley
1 teaspoon dried oregano
1. Using a 3 round cookie cutter, cut discs from each slice
of bread (save leftovers to make bread crumbs). Toast
lightly in toaster-oven until crisp. Spread 1 tablespoon
sauce onto each pizza, top with a generous tablespoon
of shredded cheese. Sprinkle with parsley and oregano.
Bake on broiler tray 23 minutes, until cheese melts.
Make a dozen of these, then cool and freeze (see note). Next
time you want a quick pizza fix, pop one or two in the toaster
oven for 3 minutes, until heated through and cheese is bubbly. Servings: 12
