Atkins - Pea and Green Bean Salad

PEA AND GREEN BEAN SALAD
Servings: 4
Prep time: 0:05:00
Bake/Cook time: 0:20:00
Calories: 80
Fat: 7 grams
Protein: 0 grams
Carbohydrates: 4 grams
Fiber: 0 grams
Net Carbs: 4 grams
1/3 pound snow peas, trimmed and strings removed
1/3 pound green beans, cut in 2" pieces
2 tablespoons olive oil
1 tablespoon white wine vinegar
1/2 teaspoon salt
1/2 teaspoon dried tarragon
1. Cook green beans in a large pot of lightly salted water 3
to 4 minutes, until crisp-tender. Add snow peas during
the last minute of cooking time. Drain and return to pot.
Mix in oil, vinegar, salt, sugar substitute and tarragon.
Toss to coat vegetables evenly.
Peas and beans while doing Atkins? Yes, if you know which
ones to choose! This quick side-dish salad may be served hot,
warm or cold.
