3 cups Atkins Pasta Cuts Rotini
1/3 cup extra-virgin olive oil
2 cans tuna in oil (6 ounces each), lightly drained and flaked
1/2 red onion, finely diced
1/4 cup chopped fresh parsley
3 tablespoons capers, with brine
2 tablespoons fresh lemon juice
1 teaspoon grated lemon rind
Salt and pepper
1. Cook pasta in lightly salted boiling water until tender.
Drain; transfer to a large bowl.
2. Mix in olive oil until pasta is coated. Add tuna, onion,
parsley, capers and their brine, lemon juice and lemon
rind. Toss gently. Season to taste with salt and pepper.
Serve warm or chilled.
Peppery capers and the bright flavor of fresh lemon balance the
mildness of pasta and give zip to canned tuna. Copyright 2005 Atkins Nutritionals, Inc., All Rights Reserved. For more on how to do Atkins, go to Atkins Diet
