1/3 cup finely chopped pancetta (1 1/2 ounces)
1 tablespoon olive oil
1/2 cup finely chopped onion
1/2 cup finely chopped fennel bulb
4 cups thinly sliced green cabbage
1/4 cup reduced-sodium chicken broth
1/4 teaspoon salt
1/4 teaspoon crushed red pepper
1 teaspoon white-wine vinegar
1. In a large skillet over medium-high heat, cook pancetta
3 to 4 minutes, until browned and crisp. Transfer to a
plate.
2. Add oil, onion and fennel to skillet and cook 3 minutes,
until lightly browned. Add cabbage, broth, salt and
pepper. Reduce heat to medium; cover and cook until
tender, 18 to 20 minutes. Stir in vinegar and pancetta.
Any combination of cabbage and smoked pork delivers superb
taste. In this refined version, we chose pancetta, and added
