1 tablespoon olive oil
1/2 red onion, thinly sliced (1/2 cup)
1 tablespoon balsamic vinegar
1/2 teaspoon granular sugar substitute
salt and freshly ground black pepper
8 ounces sharp cheddar cheese, thinly sliced
4 slices Atkins Bakery Rye bread, lightly toasted
1. Heat oil in a small skillet over medium-high heat. Add
onion and saut until lightly browned, about 5 minutes.
Stir in balsamic vinegar, sugar substitute, salt and
pepper to taste.
2. Preheat broiler. Divide cheese over bread slices. Top
each slice with one quarter of the onion mixture. Broil 4-
inches from heat source until cheese starts to melt,
about 1 minute.
Sweet-and-sour onions perfectly complement the sharpness of
