1 1/2 pounds turnips, peeled and cut into 1-inch chunks
1 pound sweet potatoes, peeled and cut into 1-inch chunks
Salt
4 slices bacon
1 tablespoon unsalted butter, at room temperature
1/8 teaspoon ground cinnamon
1/4 teaspoon pepper
2 scallions, thinly sliced
1. Put turnips and sweet potatoes in a large saucepan.
Add cold water to cover and salt generously. Cover and
bring to a boil over high heat. Reduce heat to mediumlow
and simmer until very tender, 10 to 12 minutes.
2. Meanwhile, cook bacon in a medium skillet over
medium heat until crisp. Drain on paper towels and
coarsely crumble. Reserve drippings.
3. Drain vegetables and return to saucepan. Beat with an
electric mixer or mash with a potato masher until fairly
smooth. Add butter and bacon drippings. Stir in
cinnamon and pepper. Spoon into a serving dish and
top with scallions and bacon.
Sweet potatoes benefit from savory toppings like bacon and
scallions far more than they do from treacly-sweet
marshmallows. Cook the vegetables a day ahead and reheat in
the microwave or oven; dont cook the bacon until just before
serving, though, as its texture is less than ideal when its cold. Atkins - Mashed Autumn Vegetables with Bacon and Scallions Copyright 2005 Atkins Nutritionals, Inc., All Rights Reserved. For more on how to do Atkins, go to Atkins Diet
