2 (16-ounce) packages refrigerated low-carb manicotti
1 teaspoon olive oil
6 slices pancetta or nitrate-free bacon, chopped
2 tablespoons minced onion
3 garlic cloves, chopped
1 pound lean ground beef
1/4 cup dry red wine
1 cup low-carb marinara sauce
1/4 cup plus 1 tablespoon fresh parsley, chopped
1/4 cup grated Parmesan
1. Preheat oven to 350F. Coat a 9- by 13-inch baking dish
with cooking spray. Place manicotti in prepared baking
dish; set aside.
2. Heat oil in a large nonstick skillet over medium-high
heat. Add pancetta, and cook until slightly browned,
about 2 minutes. Add onion; cook until softened, about 2
minutes. Add garlic; cook until aromatic, about 30
seconds. Add beef; cook until no longer pink, breaking
up meat with the back of a wooden spoon, about 5
minutes. Drain off excess fat.
3. Add wine; bring to a simmer. Stir in marinara sauce and
1/4 cup parsley; cook until sauce has thickened, about 6
minutes.
4. Spoon sauce over manicotti, and cover with foil. Bake
until manicotti are heated through, about 30 minutes.
Top with Parmesan and remaining parsley; serve
immediately.
This meat sauce is so hearty and satisfying, its almost a meal
