Atkins - Mahi-Mahi with Spicy Peanut Sauce

MAHI-MAHI WITH SPICY PEANUT SAUCE

1/8 cup Atkins Quick Quisine
TM Bake Mix
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
4, 8 ounce mahi-mahi filets (2 pounds)
3 tablespoons peanut or canola oil, divided
3 green onions, thinly sliced (about 1/3 cup)
2 teaspoons fresh ginger, grated
1 tablespoon chopped garlic
1 teaspoon chili paste
3 tablespoons reduced sodium soy sauce
3 tablespoons no-sugar-added peanut butter
2 teaspoons granular sugar substitute
4 tablespoons water
1. Combine bake mix, salt and pepper on a plate. Dredge
fish into mixture, tapping to remove any excess.
2. Heat 2 tablespoons oil in a large nonstick skillet over
medium-high heat. Cook fish until golden brown and
cooked through, about 4 minutes per side.
3. Wipe skillet and add remaining tablespoon of oil. Saut
green onions until softened, about 3 minutes. Add
ginger, garlic and chili paste and saut an additional
minute. Add soy sauce, peanut butter, sugar substitute
and water to skillet. Whisk until smooth and cook for 2
minutes to allow flavor to blend. Serve on top of fish
The combination of bold flavors make an outstanding Asianinfluenced
dish.
