3 pounds lamb steaks (about 1 inch thick)
2 tablespoons olive oil, divided
1 teaspoon salt, divided
1/2 teaspoon freshly ground pepper
2 teaspoons lemon zest, finely grated
3 tablespoons onion, finely chopped
1/4 cup fresh parsley, chopped
2 tablespoons fresh lemon juice
1. Prepare a grill, or preheat a broiler. Brush lamb on both
sides with 1 tablespoon oil, and sprinkle with 3/4
teaspoon salt and the pepper.
2. Grill or broil the lamb on a broiling pan, about 3 inches
from heat source: for medium-rare, until an instant-read
meat thermometer registers 140F when inserted in
center of lamb steak, 4 to 5 minutes per side; for
medium, until thermometer registers 150F, 6 to 7
minutes per side; for well-done, until thermometer
registers 160F, 8 to 10 minutes per side. Cover loosely
with foil, and let stand for 10 minutes. Cut into thin
diagonal slices. Place lamb and any juices on a serving
platter. Sprinkle with remaining 1/4 teaspoon salt, the
lemon zest, onion, and parsley. Drizzle with the lemon
juice and remaining 1 tablespoon oil.

course offers a quick, easy, and delicious way to herald the
