1 tablespoons butter
1 tablespoon canola oil
4 leeks, trimmed, cleaned and cut into 3" pieces
1/2 cup reduced sodium chicken broth or water
1/4 teaspoon pepper
1/3 cup shredded Gruyere cheese
1/3 cup grated Parmesan cheese
1. In an ovenproof skillet, melt butter and oil over mediumhigh
heat. Add leeks and cook 5 minutes until they
begin to "sweat" (release liquid). Add broth, salt, and
pepper. Cover and continue cooking 15 minutes until
leeks are tender. Uncover and boil off liquid in the
skillet. Heat broiler. Sprinkle leeks evenly with cheese.
Broil 3 to 4 minutes, 5 from heat source, until browned.
Cheese and leeks are a natural pairing. If you don't have an
