5 (1-ounce) bags Atkins Nacho Cheese Crunchers TM 2 large eggs
1/4 cup water
1 tablespoon olive oil
12 large skinless chicken thighs (3 1/2 pounds)
Chipotle Sauce (optional):
1/4 cup mayonnaise
1 chipotle en adobo, finely chopped
1. Arrange rack in center of oven. Heat oven to 400F. Line
a large baking sheet or broiler pan bottom with foil or
parchment paper. Top with an ovenproof rack that will
provide good air circulation, such as a cooling rack.
2. Process Crunchers in a food processor to crumbs; set
aside. Whisk eggs, the water and oil together in a large
bowl. Add thighs and turn to coat.
3. Lift chicken from egg mixture, letting excess drip back
into bowl; coat chicken in crumbs and place on rack on
prepared baking sheet. Bake until deep golden and
chicken is cooked through, about 40 minutes.
4. For Chipotle Sauce: While chicken is cooking, combine
mayonnaise and chipotle in a small bowl; cover with
plastic wrap and chill until ready to use. Serve with
chicken thighs, if desired.
Heres a twist on fried chicken. Atkins Crunchers take the place
of bread crumbs and baking the chicken instead of frying makes
cleanup a breeze. Baking on an open rack will give you the
crispiest coating on both sides of the chicken. Atkins - Crispy Nacho Chicken Thighs
