Atkins - Crispy Buttermilk Fried Chicken

CRISPY BUTTERMILK FRIED CHICKEN
Servings: 4
Prep time: 0:20:00
Bake/Cook time: 0:50:00
Calories: 601
Fat: 36 grams
Protein: 58 grams
Carbohydrates: 9 grams
Fiber: 5 grams
Net Carbs: 4 grams
1 1/2 cups buttermilk
1 tablespoon lemon juice
1 fryer chicken (3 pounds), cut into 8 pieces
1 cup Atkins Quick Quisine
TM Bake Mix
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
Vegetable oil for frying
1. In a large bowl, mix buttermilk and lemon juice. Add
chicken, cover and refrigerate for at least 3 hours (can
marinate overnight).
2. Preheat oven to 350F. Drain chicken and pat dry with
paper towels. Combine bake mix, salt and pepper in a
plastic bag. In two batches, add chicken and shake to
coat. Place chicken on wire rack and let dry 15 minutes.
3. Heat 1/2" oil in a large skillet over medium heat, and fry
chicken in batches 4 to 5 minutes per side, until golden
brown.
4. Place chicken on baking sheet and bake 25 to 30
minutes minutes, until chicken is cooked through.
Don't skip the marinating stepit makes the chicken flavorful and
tender. If you like your fried chicken a little spicy, add a good
pinch of cayenne pepper or Creole seasoning to the bake mix.

That is a little too much fat for my taste but boy does that look great!
