Atkins - Cornish Game Hens with Peach-Lime Glaze

CORNISH GAME HENS WITH PEACH-LIME GLAZE

Bake/Cook time: 0:30:00

3 Cornish game hens, split in half and backbones removed
(about 2 pounds each)
salt and freshly ground black pepper
1/2 cup reduced-carb peach jam
1/3 cup fresh lime juice (6 limes)
3 tablespoons soy sauce
2 teaspoons chopped garlic
1 teaspoon grated lime zest (1 lime)
1. Season hens with salt and pepper to taste; set aside.
2. In a large bowl, mix jam, juice, soy sauce, garlic and
zest. Add hens; toss to coat. Marinate 1 hour, turning
occasionally.
3. Prepare a medium grill. Remove hens from glaze;
reserve glaze. Place hens skin side down on greased
grill grate, not directly over heat. Cover and cook 25
minutes, until no longer pink inside and juices run clear.
4. Meanwhile, heat reserved glaze in a small saucepan
over high heat; boil for 1 full minute. During last 5
minutes of cooking time, brush hens with glaze and
cook directly over heat source for a crispy skin. Serve
with remaining glaze.
A brief marinating time tenderizes the meat and imparts flavor.
Removing the backbone ensures shorter grilling time and more
even cooking.
