3 tablespoons extra-virgin olive oil
3 tablespoons red wine vinegar
salt and freshly ground black pepper
1 small head radicchio, coarsely chopped (4 cups)
1 pound fresh green beans, cooked until tender crisp,
shocked and cut into 1/2 pieces (3 1/2 cups)
3/4 cup cooked wild rice (about 1/3 cup raw)
1 small red onion, very thinly sliced (1/2 cup)
1/2 cup creamy blue cheese, crumbled
1. In a large bowl, whisk oil slowly into vinegar until slightly
thickened. Season with salt and pepper to taste. Add
green beans, radicchio, rice and onion; toss well with
dressing. Add blue cheese and toss until well-blended.
Serve immediately.
A small amount of wild rice adds a delightfully chewy texture to
