1 low-carb pizza crust
1/4 cup prepared pesto
1 cup cooked chicken, cut into strips
1/2 roasted red bell pepper, cut into thin strips
1 1/2 cups shredded Italian-cheese blend
1. Preheat oven to 425F. Adjust rack to just above center
of oven.
2. Place pizza crust on a baking sheet. Leaving a 1/2-inch
border, spread pesto evenly over crust; top with
chicken, pepper and cheese.
3. Bake pizza until just golden around edges, about 8
minutes. Turn broiler to high, and broil until cheese is
browned, about 2 minutes. Cut into 6 wedges, and
serve immediately.
If you cant find an Italian-cheese blend at the supermarket,
simply combine a cup of shredded mozzarella with 1/2 cup
