Atkins - Chicken Braised in Red Wine with Mushrooms

CHICKEN BRAISED IN RED WINE WITH MUSHROOMS

1/4 cup Atkins Quick Cuisine Bake Mix
TM

2 tablespoons butter
3 tablespoons peanut oil
3 pounds chicken legs, cut into drumstick and thigh sections
4 shallots, finely chopped (about 1/2 cup)
1 tablespoon tomato paste
1 cup dry red wine
1 can (14.5 ounces) reduced sodium chicken broth
1/2 pound button mushrooms, quartered
1 tablespoon marjoram, chopped
1. Season chicken with salt and pepper. Place bake mix in
a plastic or paper bag. Add chicken in batches, and
shake to coat.
2. In a large stock pot (or Dutch oven) over medium heat,
melt butter in oil. Brown chicken in batches and transfer
to plate.
3. Add shallots to pot and saut over medium heat for about
5 minutes, or until softened. Add tomato paste and cook
for another minute. Pour in wine abd increase heat to
high. Boil wine until reduced by half, about 5 minutes.
4. Add chicken broth, mushroom and chicken pieces.
Reduce heat to low, cover partially and simmer 45
minutes, until chicken is cooked through and sauce has
thickened. Stir in chopped marjoram and serve.
You can vary the taste of this dish by adding chopped fresh
thyme, oregano or garlic. Cook it a day ahead so the flavors of
the sauce and chicken can develop.
