4 ounces cheddar or Edam cheese
2 tablespoons unsalted butter, softened
2 teaspoons Dijon mustard
1 teaspoon Worcestershire sauce
dash cayenne pepper
4 slices Atkins BakeryTM Ready-To-Eat Country White
Bread, lightly toasted
1 pound deli roast beef slices, thickly sliced
1. Preheat broiler. In a food processor, pulse cheese,
butter, mustard, Worcestershire sauce, and cayenne
until smooth, scraping down sides as necessary.
2. Spread cheese mixture on bread slices. Arrange beef
slices over cheese, leaving a thin cheese border.
Arrange on broiler pan and broil 2 minutes until cheese
bubbles and browns.
Using deli roast beef makes this is a super quick weekday
dinner option.
