4 tablespoons rice-wine vinegar
2 tablespoons toasted sesame oil
1 tablespoons peanut oil
2 teaspoons granular sugar substitute
1 1/2 teaspoons salt
1/2 teaspoon freshly ground black pepper
4 cups bok choy (Chinese cabbage), thinly sliced
1 pound cooked chicken breast, shredded and cooled
1 carrot, grated (1 cup)
4 green onions, thinly sliced (3/4 cup)
1/4 cup fresh cilantro, chopped
1/4 cup roasted peanuts, chopped
1. In a large bowl, mix vinegar, oils, sugar substitute, salt
and pepper. Add bok choy, chicken, carrot, green onion,
cilantro and peanuts. Toss gently to combine.
Sesame oil and a splash of rice-wine vinegar plus lots of
veggies make this mayo-less chicken salad a great warmweather
