Obesity Discussion Administrator Join Date: Jan 2005 Location: Phoenix, AZ Posts: 7,874 Weight Statistics 8/1/2006 Start Date: 185 lb Start Weight: 152 lb Current Weight: 155 lb Goal Weight: -33 lb Weight Loss: 5/1/2007 Goal Date:	Atkins - Spring Greens with Classic Vinaigrette SPRING GREENS WITH CLASSIC VINAIGRETTE Servings: 8 Prep time: 0:05:00 Bake/Cook time: 0:00:00 Calories: 186 Fat: 20 grams Protein: 0 grams Carbohydrates: 2 grams Fiber: 0 grams Net Carbs: 1 grams 1/4 cup red or white wine vinegar 1 teaspoon Dijon mustard 1/4 teaspoon salt 1/8 teaspoon pepper (preferably freshly ground) 3/4 cup extra-virgin olive oil 6 cups spring salad mix (mesclun) 1. In a small bowl, whisk together vinegar, mustard, salt and pepper. Whisk in the oil in a slow, steady stream until completely incorporated. 2. Pour 1/3 to 1/2 cup dressing over salad mix; toss well to coat. Refrigerate remaining dressing. This recipe provides enough dressing for 16 cups of salad.
