Dressing:
1/4 cup mayonnaise
3 tablespoons sour cream
1 scallion, chopped
1/4 cup fresh basil leaves
2 tablespoons fresh tarragon leaves
2 teaspoons white wine vinegar
Salad:
1 medium head radicchio, leaves torn
2 cups watercress
1/2 medium cucumber, peeled, seeded and thinly sliced
1 cup grape tomatoes, halved
1/2 small red onion, thinly sliced
1. For the dressing: Combine mayonnaise, sour cream,
scallion, basil, tarragon and vinegar in a blender.
Process until smooth, stopping the blender to scrape
down sides, as necessary. For the salad: Combine
radicchio, watercress, cucumber, tomatoes and onion in
a bowl. Add the dressing and toss well to coat. Divide
among 8 serving plates.
An old favorite—Green Goddess dressing—makes
a splashy comeback in this festive salad. Adjust herb quantities
