1 package Atkins Rotini Pasta Cuts, cooked according to
package directions (6 cups)
1 jar (8 ounces) pickled mushrooms, mushrooms halved
1/3 cup hot cherry pepper slices, finely chopped
1/4 cup plus 1 tablespoon extra-virgin olive oil
1/4 cup coarsely chopped flat-leaf parsley
1 tablespoon chopped garlic
salt and freshly ground black pepper
1. In a large bowl, toss pasta, mushrooms, peppers, oil,
parsley and garlic thoroughly. Season to taste with salt
and pepper.
