1/4 cup mayonnaise
1 tablespoons Dijon mustard
2 tablespoons chopped fresh parsley leaves
1/2 pound Daikon radish, peeled
2 celery stalks, thinly sliced
2 teaspoons lemon juice
Salt and pepper
1. In a large bowl, mix mayonnaise, mustard, and parsley.
Grate daikon coarsely and add to bowl. Add celery; mix
until ingredients are thoroughly combined. Stir in lemon
juice. Season to taste with salt and pepper.
Daikon radish looks like an overgrown white carrot. This low
carb veggie is a versatile alternative to red radishes in salads,
