Atkins - Pineapple-Coconut Granita

PINEAPPLE-COCONUT GRANITA
Servings: 4
Prep time: 0:10:00
Bake/Cook time: 0:05:00

Carbohydrates: 10 grams
Fiber: 1 grams
Net Carbs: 9 grams
1/2 pineapple, peeled, cored and cut into chunks (2 2/3
cups)
1/2 cup granular sugar substitute
1/2 cup water
3/4 teaspoon coconut extract
1. In a food processor, pulse the pineapple until very
smooth, about 2 minutes.
2. In a small saucepan over high heat, dissolve sugar
substitute in water. Remove from heat. Add pineapple
puree and coconut extract, stirring to combine.
3. Pour the mixture into a 9 x 13 pan. Place the pan in
freezer for 30 minutes or until ice crystals begin to form.
Using a fork, break up ice and return to freezer.
Continue breaking up ice crystals every 30 minutes until
mixture is granular and completely frozen, about 1 1/2
hours. Once the mixture is frozen cover the pan with
plastic wrap, or if making a day ahead, place granita in a
plastic storage container with a lid and store in freezer.
4. To serve, remove granita from freezer and allow to thaw
for 2-3 minutes, breaking up any large ice crystals.
Granita is a frozen mixture similar to a thick slushie or an icy
sorbet. The great thing about it is that you need no fancy
equipment.
