Atkins - French Toast Loaf

FRENCH TOAST LOAF
Servings: 10
Prep time: 0:15:00
Bake/Cook time: 0:50:00
Calories: 153
Fat: 4 grams
Protein: 13 grams
Carbohydrates: 17 grams
Fiber: 5 grams
Net Carbs: 12 grams
1 1/2 cups Atkins Quick Quisine
TM Bake Mix, sifted
3/4 cup whole wheat flour, sifted
1 1/4 cup granular sugar substitute
1 1/2 tablespoons ground cinnamon
1 teaspoon salt
1 teaspoon baking soda
1 cup buttermilk
1 tablespoon vanilla extract
6 large eggs, separated
1/4 teaspoon cream of tartar
1. Preheat oven to 350 F. Grease an 8x 4 loaf pan; set
aside. In a large bowl, whisk bake mix, whole wheat
flour, sugar, cinnamon, salt and baking soda.
2. In another bowl, combine buttermilk, yolks and vanilla.
Pour into dry ingredients and using an electric mixer on
low speed, beat until smooth.
3. In another bowl, beat whites and cream of tartar with an
electric mixer on high speed until medium peaks form,
about 4 minutes. Using a rubber spatula, fold whites into
batter in three additions. Pour batter into prepared pan
and smooth top.
4. Bake 45 to 50 minutes until golden and a toothpick
inserted in center comes out clean. Cool on wire rack for
5 minutes. Invert pan, remove loaf and cut into 10
slices. Serve with warm low-carb maple syrup or fruit
preserves.
An easy way to serve French toast at a brunch, without last
minute cooking.
