Atkins - Cinnamon Buns

CINNAMON BUNS

Dough:
1 package Atkins Quick and Easy Country White Bread Mix
4 tablespoons melted butter, cooled
1 egg yolk
1 1/2 cups water
1/4 cup granular sugar substitute
Filling:
4 tablespoons melted butter, cooled
2 tablespoons granular sugar substitute
1 teaspoon ground cinnamon
1/2 cup chopped pecans
3 tablespoons dried currants
Glaze:
1 egg yolk
1 tablespoon heavy cream
1/3 cup strained Praline Sauce
1. In a large bowl mix bread mix, water, butter, sugar
substitute and egg yolk until smooth. Cover lightly with
plastic wrap and let rise one hour.
2. Stretch dough out to a rectangle measuring 10" x 15",
long side facing towards you. For filling: mix butter,
sugar substitute and cinnamon. Brush mixture over
dough, leaving a 1/2" border at the bottom. Sprinkle
dough evenly with nuts and currants.
3. Roll dough up lengthwise from the top, stretching it as
you go along. Pinch dough tightly to seal roll and pat to
even out shape if necessary. Cut dough roll in half, then
halve each half, then cut each quarter into thirds (you
will have 12 even slices). Arrange slices on a nonstick
baking sheet, lightly cover with plastic wrap and let rise
45 minutes.
4. Heat oven to 375F. Mix egg yolk and cream. Brush
dough slices with mixture. Bake 30 to 35 minutes until
lightly browned. Cool buns five minutes then brush with
praline sauce. Serve warm or at room temperature.
You won't belive these bakerey tasting treats only have 11 Net
Carbs per serving.
