Atkins - Chocolate Souffle

CHOCOLATE SOUFFLE
Servings: 6
Prep time: 0:15:00
Bake/Cook time: 0:30:00
Calories: 240
Fat: 22 grams
Protein: 7 grams
Carbohydrates: 5 grams
Fiber: 2 grams
Net Carbs: 3 grams
3 tablespoons unsalted butter, plus 1 teaspoon for buttering
dish
3 tablespoons Atkins Quick Quisine
TM Bake Mix
1/2 cup heavy cream mixed with 1/2 cup water
2 ounces unsweetened chocolate, finely chopped
4 large eggs, separated
2 teaspoons chocolate extract
1 teaspoon vanilla extract
3 tablespoons granular sugar substitute
1. Preheat oven to 350 F. Grease a 1 1/2 quart souffl dish
with 1 teaspoon butter. Melt remaining butter in a small
saucepan over medium heat. Whisk in bake mix and
cook for 3 minutes, stirring constantly. Slowly add cream
mixture and bring to a boil over high heat for 2-3
minutes. Remove from heat and stir in chocolate until
melted.
2. In a large bowl, whisk eggs yolks, chocolate and vanilla
extracts for 2 minutes, until slightly lighter in color. Add
of the chocolate mixture into the yolks and whisk until
just combined. Add the remaining chocolate mixture,
again whisking until just combined.
3. In another large bowl, beat whites with an electric mixer
on high until frothy, about 2 minutes. Slowly add sugar
substitute and continue beating until stiff peaks form,
about 3 more minutes (be careful not to overbeat).
4. Using a rubber spatula, gently fold in of the whites into
the chocolate mixture until just combined. Add the
remaining whites, again folding until just combined.
5. Pour into prepared dish and bake 25 to 30 minutes, until
puffed and set , but still slightly wobbly in the center.
Serve warm.
Try serving this hot out of the oven with lightly sweetened
whipped cream or our PageLink(Vanilla-Coconut Ice Cream).
