1 tablespoon instant coffee
3 tablespoons chocolate extract
1 1/2 teaspoons vanilla extract
3/4 teaspoon peppermint extract
2 cups heavy cream
3 1/2 tablespoons unsweetened cocoa powder
3 tablespoons granular sugar substitute
1/2 cup raspberries, for garnish (optional)
mint sprigs, for garnish (optional)
1. In a small bowl, dissolve coffee in chocolate, vanilla and
peppermint extracts and set aside.
2. In a large bowl, beat cream, sugar substitute and cocoa
powder with an electric mixer on medium speed until
soft peaks form, about 3 minutes. Add extract mixture
and continue beating until stiff peaks form, about 2 more
minutes (be careful not to over-beat). Chill 30 minutes
before serving, and garnish with raspberries and mint
sprigs (optional).
Mint gives simple chocolate mousse a bit of a kick.
