Atkins - Cherry Cobbler

CHERRY COBBLER

Biscuit:
3/4 cup Atkins Quick Quisine
TM Bake Mix
1/4 cup pecans
2 tablespoons granular sugar substitute
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
3 tablespoons unsalted butter, cold and cut into small pieces
1/3 cup heavy cream
2 tablespoons sour cream
1 large egg
Filling:
1 1/2 teaspoons ThickenThin Not/Starch thickener
2 pounds fresh cherries, pitted (about 3 cups total)
1/3 cup granular sugar substitute (see tip)
1/4 teaspoon almond extract
1/4 teaspoon ground cinnamon
heavy cream, lightly whipped, for garnish (optional)
1. For biscuit: In a food processor, pulse bake mix,
pecans, sugar substitute, cinnamon and salt until
medium ground. Add butter and pulse until mixture
resembles a coarse meal.
2. In a liquid measuring cup or bowl, whisk heavy cream,
sour cream and egg. Pour into blender and pulse just
until combined. Remove dough and pat into a flat disk.
Cover with plastic wrap and chill 1 to 2 hours.
3. For filling and cobbler: Preheat oven to 400F. In a
medium bowl, toss cherries with sugar substitute,
almond extract and cinnamon. Pour filling into an 8
square or round baking dish.
4. Divide dough into 8 pieces and pat into disks about 3
across. Stagger biscuits over filling and bake cobbler 35
to 40 minutes minutes, until biscuits are browned and
cooked through and fruits are bubbly and tender. Serve
with freshly whipped cream (optional).
A cobbler is also known as a bramble, grunt or slump,
depending on where you live. It is delicious by any name,
especially when topped with fresh whipped cream.
