| Atkins - Snow Pea, Pepper and Cabbage Salad SNOW PEA, PEPPER AND CABBAGE SALAD Servings: 4

2 tablespoons olive oil
1 1/2 tablespoons rice wine vinegar
1 teaspoon salt
1/2 packet sugar substitute
1/2 pound snow peas
3 cups shredded green cabbage (about 1/2 pound)
1 red bell pepper, thinly sliced
3 green onions, thinly sliced
1/4 cup fresh chopped mint
1. Mix olive oil, vinegar, salt and sugar substitute in a small
bowl. Place snow peas with enough water to cover in a
microwave-safe bowl. Cover with plastic wrap;
microwave on high one minute. Drain and slice in thirds
lengthwise.
2. Mix snow peas, cabbage, pepper, onion and mint in a
large bowl. Add dressing; toss to coat. Chill 15 minutes
to blend flavors.
This refreshing, beautifully multicolored salad looks like a spring
bouquet. Snow peas and mint are two of the seasons brightest
