Atkins - Jicama, Celery, and Smoked Turkey Salad

JICAMA, CELERY, AND SMOKED TURKEY SALAD

1/2 cup mayonnaise
3 tablespoons sour cream
1 tablespoon fresh lemon juice (about 1/2 large lemon)
1 teaspoon grated lemon zest
1 teaspoon granular sugar substitute
1 medium jicama, peeled and cut into matchstick sized
pieces (about 6 ounces)
12 ounces smoked turkey breast in one piece, cut into cubes
3 celery stalks, thinly sliced (about 1 1/4 cup)
8 Romaine lettuce leaves
1/4 cup coarsely chopped walnuts, toasted
1. In a large bowl, mix mayonnaise, sour cream, lemon
juice, lemon rind, and sugar substitute until smooth.
2. Mix in jicama, turkey cubes, and celery. Toss gently to
coat with dressing. Arrange lettuce leaves on 4 plates.
Divide salad over lettuce; sprinkle with walnuts.
Our version of a Waldorf salad substitutes lower-carb jicama for
the traditional apple.
