Atkins - Romaine and Red Pepper Salad

ROMAINE AND RED PEPPER SALAD

2 tablespoons red-wine vinegar
2 teaspoons Dijon Mustard
1 1/2 tablespoons shallot, finely chopped (1 shallot)
1/4 cup extra-virgin olive oil
salt and freshly ground black pepper
2 romaine hearts, torn (4 cups)
2 plum tomatoes, quartered (1 cup)
1/3 roasted red pepper, roughly chopped (1/4 cup)
1. In a salad bowl, combine vinegar, mustard and shallots.
Gradually drizzle in oil, whisking until slightly thickened.
Season to taste with salt and pepper.
2. Add lettuce, tomatoes and red peppers to bowl and toss
gently until ingredients are well-combined. Serve
immediately.
Tomatoes and red peppers provide a contrasting color and
texture to this simple salad.
