Atkins - Tomato-Cucumber Guacamole

TOMATO-CUCUMBER GUACAMOLE

1 pint cherry or grape tomatoes, halved, or 2 medium
tomatoes, coarsely chopped
2 medium cucumbers (or 1 large seedless cucumber)
peeled and coarsely chopped (about 2 cups)
2 Hass avocados, coarsely chopped (about 1 1/2 cup)
1/4 cup red onion, chopped (about 1/4 small red onion)
3 tablespoons fresh lime juice (2 limes)
1 teaspoon freshly grated lime zest (1 small lime)
1/2 teaspoon ground cumin
salt and freshly ground black pepper
1. In a medium bowl, gently toss all ingredients. Season to
taste with salt and pepper.
This hearty salsa can be enjoyed as a side dish or as a savory
condiment for chicken, pork or fish.
