Atkins - Tri-Color Salad

TRI-COLOR SALAD

Protein: 1 grams
Carbohydrates: 5 grams
Fiber: 2 grams
Net Carbs: 2 grams
Dressing:
1 tablespoon balsamic vinegar
1/2 teaspoon fresh lemon juice
3 tablespoons extra virgin olive oil
salt and freshly ground black pepper
Salad:
1 head endive, thinly sliced on the diagonal (3 cups, loosely
packed)
1/2 small head radicchio, cut into bite-sized pieces (3 cups,
loosely packed)
1/2 small head Bibb lettuce, cut into bite-sized pieces
1. In a large bowl, combine vinegar and lemon juice.
Slowly whisk in oil until dressing has slightly thickened.
Season to taste with salt and pepper.
2. Add endive, radicchio and lettuce. Toss lightly to coat.
This pretty salad is a great side dish. To turn it into a main
course, try adding chicken or shrimp.
