Atkins - Turkey Cobb Salad

TURKEY COBB SALAD

6 cups chopped romaine lettuce
6 tablespoons low-carb vinaigrette dressing, divided
6 slices cooked bacon
2 large, hard-boiled eggs, peeled and diced
1 avocado, peeled, pitted and diced
2 cups cooked, chopped turkey meat
2 small tomatoes, diced
3/4 cup crumbled blue cheese (3 ounces)
1. In a large bowl, toss romaine with 3 tablespoons of the
dressing and mound it on a large serving platter.
Arrange bacon, eggs, avocado, turkey, tomatoes and
blue cheese in vertical stripes across the lettuce. Drizzle
with remaining dressing and serve.
This beautiful salad makes an outstanding light dinner or special
lunch. Use your imagination to create your own combinations:
Substitute a couple handfuls of sliced pitted black olives for the
avocado, use goat or feta cheese in place of blue cheese, or
even try grilled, diced steak in lieu of the turkey.
