3 slices Atkins sliced bread, crusts removed
1/4 cup blanched almonds
1 small green pepper, seeded and coarsely chopped
1 English cucumber, peeled and cut in 1/2" slices, or 2 small
regular cucumbers, seeded
2 green onions, coarsely chopped, ends thinly sliced and
reserved for garnish
2 tablespoons white vinegar
1/2 teaspoon Tabasco sauce
1 teaspoon granular sugar substitute
1/4 cup extra-virgin olive oil
4 cups ice water
Salt and pepper
1. Place bread in a bowl; cover with water and soak 5
minutes, until softened. Squeeze excess water from
bread and place bread in a food processor or blender.
Add almonds, pepper, cucumber and green onions,
process in pulses until fairly smooth.
2. Add vinegar, Tabasco, sugar substitute and olive oil.
Process until smooth. Slowly add ice water; process in
pulses until smooth. Pour into a pitcher or bowl. Season
to taste with salt and pepper. Chill 1 hour for flavors to
blend.
Gazpacho originally contained no tomatoes and is a good way
to turn less-than-fresh bread into a refreshing cold soup. Atkins - White Gazpacho
