4 medium green (unripe) tomatoes (about 1 pound)
1/3 cup stone ground yellow cornmeal
1/3 cup Atkins Quick Cuisine Bake Mix TM 1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
3 tablespoons vegetable oil
1. Cut tomatoes crosswise into 1/2 thick slices. In a
shallow plate combine cornmeal, bake mix, salt and
pepper.
2. Heat oil in a large nonstick skillet over medium-high
heat. Dredge 4 to 5 of the tomato slices (depending on
size of pan) and fry 2 minutes per side, until golden.
Repeat this process, wiping skillet between batches.
Fried green tomatoes are a Southern tradition, and absolutely
delicious served alone or topped with a slice of cheddar cheese
